Description

Long dumplings made from a mixture of raw grated and boiled potatoes. The raw potato leaves the surface rough and shaggy, which is why the Saarland calls them Hoorische – the hairy ones. They come to the table in a bacon cream sauce, with sauerkraut, leaf salad or apple compote on the side.

Directions

  1. 1

Peel and wash 1 kg of raw potatoes and grate them finely. Wrap the grated mass in a kitchen towel, a portion at a time, and wring it out as firmly as you can. Catch the potato water in a bowl.

    ⏱️ approx. 20 min

💡 Tip: After a few minutes the starch settles at the bottom of the potato water. Pour off the water and stir the starch back into the dough – it is what binds the dumplings.

  2. 2

Peel 500 g of boiled potatoes – ideally cooked the day before – and press them through a ricer. Knead them quickly together with the wrung-out raw mass, the eggs, the flour, salt and a pinch of nutmeg into a smooth dough.

    ⏱️ approx. 10 min

💡 Tip: Do not let the dough stand: raw grated potato turns grey within minutes.

  3. 3

Bring plenty of salted water to a bare simmer in a wide pot. It must not bubble hard – only pearl gently.

    ⏱️ approx. 5 min
  4. 4

With damp hands, shape elongated dumplings and slide them into the simmering water one by one. Cover and let them steep for 20 to 25 minutes. The Hoorische are done once they float to the surface.

    ⏱️ approx. 25 min
  5. 5

Meanwhile dice the bacon and render it slowly in a dry pan until golden. Sweat the finely diced onion in the fat until translucent.

    ⏱️ approx. 8 min
  6. 6

Deglaze with the meat broth, pour in the cream and let the sauce reduce uncovered for a few minutes until it thickens slightly. Season with pepper – the bacon usually provides enough salt.

    ⏱️ approx. 6 min
  7. 7

Drain the dumplings, arrange them on warmed plates, spoon the bacon cream sauce over them and scatter with chopped parsley. Sauerkraut, a leaf salad or apple compote go well alongside.

    ⏱️ approx. 5 min

📜 Origin & History

The potato – 'Grumbeere' in the local dialect – became the staple food of the Saar region under Prince Wilhelm Heinrich of Nassau-Saarbrücken, who reigned from 1741 to 1768 and is still nicknamed the 'Grumbiere-Graf', the potato count. The Saarland family of potato dumplings grew out of that kitchen: Gefillde are the filled ones, stuffed with liver sausage, black pudding or minced meat; Geheirate marry flour dumplings with potatoes; and Hoorische are the plain, unfilled ones. Their name comes from the surface: because part of the potatoes goes into the dough raw, grated and firmly wrung out, the cooked dumplings stay rough and 'hairy'.

Frequently Asked Questions

Why must Hoorische never boil hard?

The dough is held together by potato starch and egg alone. Hard-boiling water tears the dumplings apart; they need a bare simmer just below boiling point, with a lid on.

What is the difference between Hoorische and Gefillde?

Both are Saarland potato dumplings. Gefillde are stuffed with liver sausage, black pudding or minced meat; Hoorische stay unfilled and live off the rough surface the raw grated potato gives them.

Which potatoes work best?

Floury varieties. They release the most starch when grated and riced, and that starch is what binds the dough without much flour.

Can the dough be prepared in advance?

Only the boiled potatoes can be prepared ahead, ideally the day before. The finished dough has to be shaped straight away, because raw grated potato turns grey within minutes.
