Germany has an unusually large number of names for the grated potato pancake, and almost every one marks a regional variant: Reibekuchen in the Rhineland, Reiberdatschi in southern Bavaria, Dotsch in northern Bavaria and Thuringia, Klitscher in Saxony, Fratzen in the Ore Mountains, Grumbeerkichelcher in the Saarland – and Bambes in the Vogtland, where the batter is made with buttermilk. In the Vogtland the pancakes are also known as gebackene Klöße, baked dumplings. They are traditionally eaten with apple compote and were a cheap, filling everyday meal in a region whose economy long depended on lace-making and textiles rather than agriculture.
